I just use a longsword. It has a very comfortable move set low stamina drain decent attack speed/reach. All round good weapon. And once you Dark infuse and buff with Resonant Weapon it hits like a truck. Better to pick the weapon you like best and just infuse + buff and it will hit hard regardless.

Depends on what you mean by DEX weapons. There are some fairly slow weapons with good DEX scaling for instance. And the Rapier certainly isn't a STR weapon but it has pretty mediocre DEX scaling (and is a DPS machine in spite of this -- mostly because it's fast enough to take advantage of the damage boost rings in the game)
